I can only speak for Amsterdam. You must visit Anne Franks attic where she and her family hid from the Nazi’s.
Also take the time out to take a boat trip. What I found very enjoyable was to just follow your nose. I did so on the Damrak and found myself wandering into the red light district (very colourful at night), the *** museum!!, outside the Royal palace, watching the living statues and visiting a myriad of shops. Whether you chose to imbibe in some of the legally and freely available herbal refreshments is up to you.
A city well worth the visit, and I will return one say.
    Enjoy.

In Paris there are the usual places like the Eiffel Tower, Notre Dame Cathedral and the Arc de Triomphe, but there’s also the following:

    Sacre Coeur Cathedral in Montmarte
(the Montmarte area is nice to walk around in, too)
The Musee de la Musique (Museum of Music)
St. Michel is another nice area to walk around in (lots of shops and cafes and such), and it’s not far from Notre Dame
Pere Lachaise Cemetery (where Jim Morrison, Chopin and others are buried)

Also try to take a cruise up the Seine, there are lots of ferry-like boats that do this and are not expensive. Have fun! :)
